SNACK ALERT. Keto pigs-in-a-blanket recipe!
Sometimes we have a lot of fun here in our little test kitchen at Nush Foods. And we’ve come up with a throw-back recipe we think you (and kids of all ages) will ALSO have fun with. Especially when it comes to eating them!
It’s Nush pigs-in-a-blanket!
And since this old-fashioned favorite is based on Nush pancake and waffle mix, it’s low-carb, gluten-free, diabetic-safe, and keto-friendly — with ZERO added sugar.
Here’s how we did it:
Pre-heat oven to 350 degrees. Mix 1 ½ cups Nush pancake mix with 1 cup water until smooth. Fill cups of greased muffin tin just ¼ full. Cut your favorite kind of hot dogs into small pieces (1-2 inches long) and place on top of batter in each mold. Bake 20 minutes or until starting to brown.
We like to eat these while they’re still warm, but they’re good at room-temp too! And you might like to add a dab of mustard — totally up to your taste buds.
