Easy Low Carb Brownie Recipe
We’ve made a lot of brownies over the years (and yes, we remember when we used to make them with unhealthy flour and sugar — ugh), but we’ve decided it’s more fun to make treats like brownies when you have a head start with Nush low carb pancake mix. (It’s fun to eat them, too.)
And of course, even though these brownies are super chocolate-y and satisfying, since they start with our keto friendly pancake mix, they’re still low-carb, gluten-free, diabetic-safe, grain-free, and have ZERO added sugar.
So here’s how. Just mix these ingredients in a medium bowl:
1 egg
1/2 c. Nush low carb pancake mix
1/3 c. erythritol (or your favorite non-sugar sweetener)
1 Tbsp. unsweetened cocoa powder
1/4 c. water
1 tsp. vanilla
1/4 c. unsweetened chocolate chips (optional)
1/2 c. chopped walnuts (optional)
3/4 c. oil
Pour batter into greased 8x8 pan, and bake for 15 minutes in a pre-heated 350 oven.
